Potassium bicarbonate or potassium hydrogen carbonate is an inorganic compound with the chemical formula KHCO3. It appears as a white solid. It is produced by treating an aqueous solution of potassium carbonate with carbon dioxide. Not to be confused with baking soda.
This compound is a source of carbon dioxide for leavening in bread making. It can replace baking soda for those on a low sodium diet and is an ingredient in low sodium baking powder.
As a cheap and non-toxic base, it is widely used in different applications to adjust pH or as a reagent. Examples include as a buffering agent in drugs, an additive in winemaking, and is used to improve taste and to soften the effect of effervescence.
In agriculture, potassium bicarbonate has widespread use in crops, especially to neutralize or correct acidic soil.
In addition to deacidifying the soil, in organic farming and gardening it is an effective fungicide against powdery mildew, gray mould, peach bubble, downy mildew, apple scab and Spanish moss.
Potassium bicarbonate is also used as an extinguishing agent in some dry chemical fire extinguishers.
